Currently, fats, oils, and greases sourced from restaurant and food waste are the primary feedstocks for sustainable aviation fuel (SAF), offering significantly lower greenhouse gas emissions compared to traditional fossil fuels. Despite its potential benefits, SAF accounts for less than 1% of aviation fuel production, pointing to a critical issue – the insufficient supply of industry feedstocks to meet the surging demand.
